Roasted Red Pepper Pasta
Today I'm continuing my focus of savory dishes. For the next week, or so, I'm taking a break from my usual sweet treats to bring you some tasty savory dishes. I figured we all had a ton of sweets over the Holidays, and maybe need a slight break.
Baking is a passion of mine, I love testing out new sweet recipes, and particularly working with cake decorating. Cooking has never been my favorite. My husband likes to cook, though, so it works out well. I'm slowly starting to develop more of a knack and enjoyment out of cooking. I feel like a broken record this week, but here goes yet another Pioneer Woman recipe. [Insert comments about how wonderful The Pioneer Woman is.] I may mention it very often, but really her recipes are some of my favorite out there. I think she and I have very similar taste buds, except I could do without the shrimp she is so fond of...
I got her new cookbook for Christmas, so I got inspired to try some of her recipes. Today's recipe isn't actually in the cookbook, but I saw it on one of her episodes on Food Network. A few weeks ago I saw one where she made this delicious Roasted Red Pepper pasta that had me drooling from the couch. As soon as I saw the dish I knew two things: I would love it and my husband would not.
As I've mentioned before, my husband is a fan of spice, but not a big fan of eating actual peppers and onions. You may recall my experiments of Cajun chicken pasta and of stuffed peppers on evenings when he was gone. Well a couple nights ago he was going to make a small pizza with a new pizza oven he got for Christmas (which by the way is awesome!). I decided it was time to try out this scrumptious pasta. Peppers, onions, and pasta? Sounds like a home run to me!
It was amazing! I was almost scared to taste it because I had such high expectations of what I wanted it to taste like. Once again, her recipe did NOT disappoint! I'm counting down the days until I can make it again.
Roasted Red Pepper Pasta ingredients:
- 12 oz pasta
- 15 oz can roasted red pepper
- 1/2 large onion
- 3 cloves garlic
- 1 cup chicken broth
- 1/2 cup heavy cream
- Salt and pepper, to taste
Roasted Red Pepper Pasta directions:
- Start pot of boiling water and cook pasta
- Chop up onion and garlic
- Do a rough chop of roasted red peppers
- Melt 2 tbs butter in skillet
- Saute onions and garlic for 3-4 mins
- Add roasted red pepper and saute for an additional 2 mins
- Remove from heat and place in blender/food processor
- Puree until smooth
- Melt another 2 tbs butter in the same skillet
- Pour in pureed pasta sauce and mix in chicken broth
- Add in cream and heat up sauce
- Add salt and pepper to sauce
- Drain cooked pasta
- Pour into skillet and mix until sauce is completely mixed in with pasta, heat until warm
Not being a chef, by any means, I was quite proud of how it turned out. I've never made homemade pasta sauce before, and it felt pretty great knowing I had made the whole meal from scratch. Ok...so maybe I didn't roast my own peppers, or make my own pasta. But it's a start!
